Curd muffins with carrots, raisins and cinnamon - a recipe for which a simple treat for sweet tooth is obtained from simple products. The texture of the curd muffins is wet due to raw carrots. However, even the most finicky sweet tooth is unlikely to be able to guess the ingredients from which the pastries are prepared, and even more so to recognize carrots. It gives the test more than moisture. Carrots color curd muffins in a warm light yellow color, which looks very appetizing. Raisins can be presoaked in alcohol, but if the dessert is prepared with the expectation of kids, it is better to just scald the raisins with boiling water. For flavor, add ground cinnamon to the cupcake dough, which goes well with carrots.

Ingredients for curd muffins with carrots, raisins and cinnamon.

  • 200 g of cottage cheese;
  • 85 g of granulated sugar;
  • 5 g ground cinnamon;
  • 2 chicken eggs;
  • 150 g raw carrots;
  • 65 g of butter;
  • 90 g semolina;
  • 100 g whole wheat flour;
  • 5 g baking powder;
  • 100 g of raisins;
  • icing sugar, salt, baking soda, vegetable oil.

A method of preparing curd muffins with carrots, raisins and cinnamon

We make dough for curd muffins. In a deep bowl we spread fresh dry cottage cheese. I advise you to cook it from fat cottage cheese, there are fewer lumps in it.

Mix the curd with sugar, add ground cinnamon, a pinch of fine salt to balance the sweet and sour taste of the curd muffins with carrots.

Then break two raw chicken eggs into a bowl. If the eggs are small, then it is better to take three pieces.

Mix the ingredients with a spoon, no need to beat. At this stage, you only need to dissolve the granulated sugar.

We grind the raw carrots, three on a shallow vegetable grater, add to the wet ingredients, mix.

Melt the butter, cool slightly and pour it into a bowl. You can mix in equal parts butter and olive oil.

Next, pour semolina and 1 2 teaspoon of baking soda. If you are preparing sweet pastries from sour-milk products, then I advise, in addition to baking powder, always add a little soda.

Pour baking powder into whole wheat flour, sift through a sieve all together and add to a bowl.

We put scalded raisins, quickly knead the dough for muffins, leave it for 10-15 minutes. In the meantime, preheat the oven to 175 degrees.

Silicone molds for baking cupcakes grease with droplets of vegetable oil (odorless). We fill the molds with a test for 2 3 volumes.

We send the cottage cheese muffins to a warmed frying cabinet on the middle shelf. Bake for 25 minutes. The exact baking time depends on the individual characteristics of your plate.

We get ready-made curd muffins with carrots, raisins and cinnamon from the molds, sprinkle with powdered sugar and serve on the table with a cup of cocoa or sweet tea. Enjoy your meal!

Muffins, or muffins with carrots, are good pastries, especially if you make them from whole grain flour and with a little sugar. By the way, ordinary white sugar can be replaced with honey, it will be even tastier!
