New Year's salad with red fish and caviar will decorate any snack table, not only the main one of the year. There is no special exoticism in this dish - a little salty red fish, a bit of caviar, fat cream cheese, eggs, an orange and, of course, mayonnaise. What holiday salad without it? To decorate, you will need a quail egg and several green olives.
Any salty red fish - salmon, pink salmon, salmon or chum salmon is suitable for the recipe. I myself salted pink salmon according to the Scandinavian recipe under a beet coat. The result was a tender, dark pink pink salmon, which is easy to cut into thin slices - convenient for making sandwiches and salads.
You can cook this appetizer in advance, and decorate it right before serving so that the caviar does not dry out, since with the dried caviar the salad looks sad and unappetizing.

- 100 g of salty red fish;
- 35 g of red caviar;
- 80 g cream cheese;
- 100 g of green olives;
- 1 small sweet and sour orange;
- 4 chicken eggs;
- 1 quail egg;
- 90 g mayonnaise;
- black pepper, arugula for serving.
The method of preparation of the New Year’s salad with red fish and caviar
Boil the hard boiled eggs, cool, separate the protein from the yolk.
Rub the protein on a cheese grater, separate 2/3. Put the protein on a serving plate, grease with mayonnaise.
Mayonnaise can be mixed with fat sour cream, a little salt and pepper.
On a layer of mayonnaise, spread the whole egg yolk, grated on a fine (cheese) grater. Mayonnaise in this salad is important - it holds the layers together, prevents them from crumbling.
Gently, so that the yolk layer does not crumble, grease it with mayonnaise, and put on top the fish cut into thin slices.
Cut green olives finely, make the next layer, again, through the mayonnaise layer. By the way, olives stuffed with anchovies are suitable for this dish.
Cream cheese (I advise you to take a tender and not very salty) rubbed coarsely, put on olives.
We peel the orange from the peel, cut the slices - cut the pulp segments. Thoroughly clean the segments of white skins. Cut the orange into cubes, put it on the cheese, greased with mayonnaise.
Orange needs sweet and sour, be sure to try it, as a very sour fruit can spoil the taste of the dish.
Cover the orange layer with the remaining egg white, and you can decorate the salad.
Boil a hard-boiled quail egg. It will take only 2 minutes. The egg is cooled in ice water, cleaned.
We cut the olives into thin rings.
We spread red caviar in the middle of the circle, around the caviar circle we make a ring of olives.
We put a quail egg in the center of the salad.
Decorate the plate with arugula and serve on the festive table. Enjoy your meal!
